Honey makes everything better - Easy Honey Lemon Chicken dish

If you are looking for an easy and quick chicken dish that's also super yum, honey lemon chicken with tomato paste is the answer. I found this recipe from the website norecipes.com by Marc Matsumoto. It's easy for beginner chefs and my hubby absolutely loved it!

Ingredients for the sauce:

2 tablespoon tomato paste

2 tablespoon lemon juice

2 tablespoon water

1 tablespoon honey (I added a little bit more)

1/2 teaspoon salt

Rest of the ingredients:

1 pound chicken thighs (or chicken breasts) cut into small chunks (~ 2")

Salt & pepper (based on personal preference)

All purpose flour (just a little to dust the chicken)

1~2 cloves garlic, minced

To make this yummy dish, you simply mix all the ingredients for the sauce in a bowl first. Next, sprinkle the chicken with salt & pepper, then dust with a little bit of flour. After that you just heat a pan over medium heat until hot, add extra virgin olive oil and garlic, then add the chicken and cook until it's mostly cooked through. Finally, u add in the sauce and cook until there is almost no liquid. Done!

I found this to be a really simple dish that can be made anytime you need to make something fast. It can be served with rice or pasta or any type of noodles. For our dinner, I made honey lemon chicken with Chinese noodles with a side of veggies (broccolini and spinach) plus a sunny side up egg =) We had a wonderful healthy meal at home.

It is also very suitable to pack for lunch the next day! With a little bit of extra effort (here I made a soft boiled egg and some beans in addition to broccolini for hubby's lunch), lunchbox can look amazing as well as delicious and healthy =)

Extra tip: It is easier to buy boneless chicken (skinless if you don't eat skin). However, I had chicken thighs with bone and skin, so I had to cook it in boiling water first to remove the bones and skin. It takes a bit more work, but you can save the water for later use as a natural chicken stock to make soup. This is what I did, I saved the bones (not the skin) and let them cook in the boiling water for longer to make it more fragrant and sweet and made creamy corn soup with it!
