Stuffed Bell Peppers

Finally used our big oven the other day! Made too much quinoa the other day and we still had a pack of organic lean ground beef, so hubby and I decided to make stuffed bell peppers for dinner =)
Here are all the ingredients, plus some garlic and shallots and cheese.

I had a lot of fun making them, partly because I was excited to finally use our big oven. The recipe is very simple as well :
First of all, I cut the tops of the peppers and removed the seeds. In the mean time preheated oven to 350F. I then cooked the bell peppers in boiling water for 5 min and then inverted them and put them aside to drain the water. A lot of people add rice in the peppers, but we wanted to make it healthier, so I cooked the ground beef, onions, and corn, and then added in our healthy leftover quinoa and mixed well with some spices. Finally, stuffed everything in the peppers and covered them with cheese on top.

Lastly, drizzled the stuffed peppers with olive oil, along outside of the peppers, and put in the oven (preheated to 350F) for 30 min.

This was another fun experiment in the kitchen. Hubby and I both overate and had 2 bell peppers for dinner. We were both so full but we did not regret eating too much cause it was so yum!
After stuffing the bell peppers, we still had some quinoa/beef/onion/corn mix left. I made some more veggies and packed them together for lunch the next day. Another healthy dinner and lunchbox =) Will def try to bake more food in the future =)
