Yums! Chia Seed Pudding

I've been wanting to make chia seed puddings for a long time now and I finally did =) They not only look beautiful, but also they are super healthy and delicious! AND... the best thing is they are very fast to make in the morning when you are in a rush! Don't underestimate these little cups... they are actually pretty filling!
INGREDIENTS:
1 cup Unsweetened almond milk
1 cup Greek yogurt (I used honey flavour, can also just use plain)
1/4 cup Chia seeds (I used a mixture of Chia, Buckwheat & Hemp this time)
Granola/nuts or seeds
Fresh blueberries (or ther fruits)
To make this healthy breakfast, whisk almond milk and greek yogurt in a bowl until blended, then whisk in the chia seeds (stir to distribute the seeds so they don't settle at the bottom). Then cover and put in the fridge overnight.
The next morning, you simply need to spoon the "pudding" into your glasses and add granola or other wholegrain nuts/seeds and top with fresh blueberries. Done =) Very simple/quick breakfast or even dessert =)
Usually, depending on how much you want to make, the ratio of almond milk to greek yogurt is 1:1. But depending on your preference, you can add more yogurt if you want. Of course, you don't need to use almond milk but other alternatives like coconut water. I used organic almond milk becaise it contains excellent source of calcium and vitamin A, E, D and B12, and it is also low in fat and calories. Greek yogurt is super good for you as well because it contains probiotics, which are live bacteria and yeasts that are good for your health, especially your digestive system. They not only help you digest food but also help stimulate your body's natural immune system to pretect from infections. Therefore, it is good to eat foods containing probiotics to maintain/restore your intestinal microflora, the "GOOD" bacteria.
What's also so good about this yummy pudding is of course the chia seeds. They are one of my favorite superfoods that are whole grain and are highly nutritious with very low calories as well (very high in fiber, high quality protein, omega-3 fatty acids, and also contain decent amount of important nutrients for bones, including calcium, manganese, magnesium, phosphorus, and vitamins). They are also loaded with antioxidants. Because of their goodness, I believe having even a small amount of chia seeds daily can lower the risk for heart disease and diabetes and your body will be in a healthier state in general.
Lastly, to make this pudding even more amazing, I added granola and wholegrain nuts & seeds, and topped with fresh blueberries. Here is a closed up of the puddings:

The best thing about making these puddings is that you can be creative and have endless combinations making your unique pudding mixture. I had a lot of fun making them and will for sure try assembling them in different ways and add different ingredients next time!
