Tomato Pepper Chicken

Another healthy & easy chicken dish =)

Ingredients:

Chicken breasts (cut into small chunks)

1 Red & 1 Yellow bell pepper (cut into chunks)

3 cloves of garlic (minced)

1~2 shallots (diced)

A little bit of paprika for taste (amount depending on personal preference)

Salt & pepper

Flour (a little bit to dust on the chicken)

Cilantro for garnish

To make this easy yummy dish, you first prepare and cut / mince all the ingredients you need. Then, add salt & pepper to the chicken and then dust with flour.

Then, heat up a pan over medium high heat until hot and add oil. I first add the garlic and brown the chicken and transfer the chicken to a bowl first. Then, add in shallots and bell peppers and saute until the peppers start to soften. Then I add back the chicken and fragrant with paprika, salt & pepper and the tomato paste. Lastly, simmer for ~10min until chicken is cooked through (you may need to add a little bit of water). Finally, garnish with chopped cilantro. Done!

This is another easy chicken dish I made recently. For dinner, we had veggies and brown rice with the chicken. Another simple healthy meal =)

If you cannot finish the chicken in one meal, it is very suitable to pack for lunch the following day. You can also easily make a quick lunch with it! For me, I made a chicken lettuce wrap along with Chinese green onion waffle. I added eggs when I was making the green onion waffle and also sprinked with hemp to make it even healthier!
